Excellent textures, moisture and flavours achieved with mixed grains, rye sourdough starter and speedy rising by the woodburner. I have been baking bread and brioches since my early twenties with fresh and dried yeast but wanted to learn about sourdough making, to see if I could fit it into my busy schedule and David provided me with the solutions.
